Ingredients
1 3/4 cup Organic Coconut Flour
1/2 cup Unrefined Organic Coconut Oil
1/4 cup Raw Manuka Honey
1 Organic Pasture Raised Egg
1/2 cup Organic Carrots, shredded
2 tbsp Plain Organic Yogurt
1 tsp Pure Vanilla Extract
1/2 tsp Baking Soda
Directions
Preheat oven to 375 degrees.
Whisk together the coconut oil, egg, yogurt, and vanilla extract in a medium or large mixing bowl.
Add the flour, honey, and baking soda to the bowl, blend well.
Add the shredded carrots to the batter, mix well.
Scoop out a spoonful of cookie batter onto a non-stick or greased baking pan, repeat. Make sure there is enough space in between each scoop.
Insert the pan into the oven and bake for 15 minutes.
Remove pan from oven and allow cookies to cool before serving.
