Bring the carrot and apple juice to a boil in a small to a medium saucepan.
Remove pan from heat and allow the juice to cool for five minutes.
Whisk gelatin into the pan until dissolved.
Pour mixture into preferred mold(s) and refrigerate for a minimum of four hours.
Serve.
